Method

  1.  Put the butter in a large saucepan and melt over a low heat. Add the marshmallows and stir until the mixture is completely melted, then remove from the heat.
  2.  Next add the Rice Krispies and stir until well coated.
  3.  Using a buttered spatula, press the mixture evenly into a 13" x 9" x 2" greased baking tray. Allow to cool. Cut into 2" squares. Stack two squares together using icing, then decorate with extra icing and sweets, nuts or dried fruit as you choose.
  4.  You could even use liquorice bows as a finishing touch!

Icing directions

To make the icing, beat the butter in a large bowl until it's soft. Then add half the icing sugar and continue beating until smooth. At that point, add the remaining icing sugar with one tablespoon of the milk. Beat until creamy then add the food colouring and mix well. Don't forget, you can add extra icing sugar to thicken the mixture, or make it less stiff with a little extra milk if necessary.

Microwave directions

Heat the butter and marshmallows in a microwave-safe bowl on HIGH for 3 minutes. After 2 minutes, stir the mixture until it's smooth. Then simply follow steps 2-4 above. Microwave cooking times may vary.

  • 45g butter or margarine
  • 300g (about 40) marshmallows
  • 180g Kellogg's Rice Krispies
  • Assorted sweets/dried fruit/nuts
  • Red string licorice
  • Icing:
  • 140g butter, softened
  • 280g icing sugar
  • 1-2 tbsp milk
  • A few drops of food colouring
