Crunchy Ice Cream Sandwiches

Method

  1.  First melt the butter in a large saucepan over a low heat, and add the marshmallows. Stir until the mixture's completely melted and remove from the heat.
  2.  Add the Rice Krispies and stir until well coated.
  3.  Using a buttered spatula, press the mixture evenly into a 13" x 9" x 2" greased baking tray. Allow to cool and cut into 24 squares. Next, top 12 of the cereal squares with ice cream and place the remaining squares on top to make delicious little sandwiches.
  4.  You can then wrap them individually in clingfilm and store in an airtight container in the freezer for up to six weeks.

Microwave directions

Heat the butter and marshmallows in a microwave-safe bowl on HIGH for 3 minutes. After 2 minutes, stir the mixture until it's smooth. Add the peanut butter, stirring until melted. Then simply follow steps 2-4 above. Microwave cooking times may vary.

  • 45g butter or margarine
  • 200g (about 30) marshmallows
  • 90g creamy peanut butter
  • 120g Kellogg's Rice Krispies
  • 1 tub of ice cream, softened
