Method

  1.  First of all, grease a 12-hole cake tray and line it with paper cake cups.
  2.  Put the butter in a large saucepan and melt over a low heat. Add the marshmallows and stir until the mixture is completely melted, then remove from the heat.
  3.  Next add the Rice Krispies and the vanilla and stir until well coated.
  4.  Then you can evenly divide the warm mixture into the paper cake cases, gently pressing down to fill the cases out. Leave the tops slightly rounded.
  5.  Finally you can decorate with icing and sprinkles plus sweets, dried fruit and nuts if you want to.

Icing directions

To make the icing, beat the butter in a large bowl until it's soft. Then add half the icing sugar and continue beating until smooth. At that point, add the remaining icing sugar with one tablespoon of the milk.Beat until creamy then add the food colouring and mix well. Don't forget, you can add extra icing sugar to thicken the mixture, or make it less stiff with a little extra milk if necessary.

  • 45g butter or margarine
  • 300g (about 40) marshmallows
  • 180g Kellogg's Rice Krispies
  • 2 teaspoons vanilla essence
  • Assorted sprinkles/sweets/dried fruit/nuts
  • Icing:
  • 140g butter, softened
  • 280g icing sugar
  • 1-2 tbsp milk
  • A few drops of food colouring
